In this second part in the series, let's take a look at lunch ideas. Depending on the length and time of day of your Back to School party, you may be faced with having to serve a lunch, or something a little more hearty than just snacks. The key here is to keep things simple, for both the kids and for yourself.
Wraps are perfect kid-friendly food. Take a flour or corn tortilla, and place thin slices of cheese, deli meat, and lettuce on top. Roll it all up and you've got yourself a healthy lunch! You can also slice them into pieces (secure each piece with a toothpick if necessary) and serve them on a plate that way. Peanut butter and jelly or peanut butter and banana make great fillings too, or use your imagination and your children's tastes to create your own.
If you want to make traditional sandwiches, here are some ideas for tasty and nutritious fillings that are sure to be a hit with the younger crowd.
In a large mixing bowl, combine diced ham and celery. Set aside. In a small mixing bowl, combine mayo, relish, and mustard; mix well. Pour mayonnaise mixture over ham mixture and stir well to coat completely. Refrigerate until ready to use.
Scoop ham salad into small dinner rolls, or use as a sandwich filling on bread. You can also serve it on lettuce leaves, or as a topping for crackers.

In a small mixing bowl, combine peanut butter, cream cheese, and honey. Mix well until thoroughly combined. Add fruit and stir gently until well mixed. Refrigerate until ready to use; allow to soften slightly for easier spreading.
