As the clock strikes midnight on New Year's Eve, it's time to raise your glass of champagne and toast the passing of one year as well as the beginning of the next. Champagne is the perfect indugence all on its own, but it's also a versatile and tasty base for many mixed drinks. When making champagne cocktails, use a good quality dry champagne unless the recipe specifically calls for something sweeter. Save the high-end bubbly for your midnight toast, and use less expensive champagne for your cocktails if you'd like. Having a party? Figure out how many appetizers you'll need first! Most varieties of sweet liqueur will mix well with champagne, so feel free to experiment a bit. Use a small amount of liqueur to start off with. About half an ounce for every four ounces of champagne will ensure that the heaviness of the liqueur won't overwhelm the delicate flavors of the champagne. You can add more liqueur to taste if need be. Each recipe makes one cocktail, unless otherwise noted. Kir Royale1/2 ounce Creme de Cassis 4 ounces chilled champagne Mix gently and serve in a champagne flute. Cointreau Royale1/2 teaspoon Creme de Cassis 1/2 ounce Cointreau 4 ounces chilled champagne Mix gently and serve in a champagne flute. Champagne Screw (makes 2 servings) 1 ounce vodka 4 ounces orange juice 4 ounces champagne Mix in a cocktail shaker with crushed ice; strain into champagne flutes. Pink Mimosa (makes 2 servings) 4 ounces pink grapefruit juice 4 ounces champagne Mix in a cocktail shaker with crushed ice; strain into champagne flutes. French Revolution1 ounce brandy 1/2 ounce Framboise 4 ounces champagne Mix gently and serve in a champagne flute.
