Dressed or Deviled Egg Recipe: These Curried Deviled Eggs, Guacamole

Traditional deviled egg recipe gets dressed up for a party!

Dressed eggs or deviled eggs, whatever you call them: these variations on traditional deviled eggs (click here for the traditional version) make great party appetizers and appeal to those with a sense of excitement! Devilled eggs make great party food: they're easy to hold, they make a lovely presentation and they're good for you, too. Kids love them.

Curried Deviled Eggs

  • 12 eggs
  • 1/4 cup mayonnaise
  • 1 tablespoon curry paste, mild or hot
  • 2 teaspoons lemon juice
  • fresh parsley for garnish (optional)

Hard boil and slice eggs as done in Basic Devilled Eggs. Combine yolks, mayonnaise, curry paste, and lemon juice in a zipper bag and mash until smooth and combined.

Fill egg whites as above, and garnish with sprigs of parsley if desired.

Tomato & Basil Deviled Eggs

  • 12 eggs
  • 1/4 cup mayonnaise
  • 2 teaspoons dijon mustard
  • 2 tablespoons sun-dried tomatoes, minced (use the dry tomatoes, not those packed in oil)
  • 4 tablespoons fresh basil, finely minced
  • 1 teaspoon balsamic vinegar
  • salt and white pepper to taste
  • fresh basil sprigs and strips of sun-dried tomato for garnish (optional)

Hard boil and slice eggs as done in basic devilled eggs. Place yolks, mayonnaise, dijon mustard, minced sun-dried tomato, minced basil, vinegar, salt, and white pepper in a zipper bag. Mash well until mixture is smooth and well combined.

Fill egg whites as above, and garnish with sun-dried tomato strips and fresh basil if desired.

Guacamole-Style Deviled Eggs

  • 12 eggs
  • 2-3 avocados, peeled, pitted, and mashed
  • 2 tablespoons fresh basil or cilantro, minced
  • 2 tablespoons green onion, minced
  • 2 cloves garlic, minced
  • 1-2 jalapeno peppers, seeded and minced
  • 2 tablespoons lime juice
  • 1-2 teaspoons red pepper sauce
  • salt and white pepper to taste
  • fresh basil or cilantro leaves for garnish (optional)

Hard boil and slice eggs as done in basic devilled eggs. Combine egg yolks, mashed avocados, basil or cilantro, green onion, garlic, jalapenos, lime juice, red pepper sauce, salt, and white pepper in a zippered plastic bag. Mash well until mixture is smooth and well combined.

Fill egg whites as above and garnish with fresh basil or cilantro if desired.

Note: You will be left with extra filling with this recipe. Spread the mixture on crackers and garnish with fresh herbs for another tasty appetizer.
