Cool cucumbers, cocktail sauce, and plump shrimp combine to make a delicious, nutritious, and perfectly portable appetizer.

Shrimp cocktail is a terrific appetizer for a sit-down meal, but if you're planning a cocktail party or other gathering where your guests will be mingling, you'll want something that's bite-sized and portable. This shrimp and cucumber appetizer recipe is the perfect solution.

Use English cucumbers if you can; they're smaller in width and somewhat drier than the garden variety, making it easier to spread the cocktail sauce mixture.

This recipe is perfect for a cocktail party or bridal shower, but it's equally suitable for a holiday gathering or any other celebration. Serve the finished appetizers in small batches, keeping the rest refrigerated; refill the serving plate as needed.

Easy Shrimp Cocktail Bites

  • 1/2 cup cream cheese, softened
  • 1/4 cup seafood cocktail sauce
  • 2 English cucumbers
  • 36 large shrimp, peeled and deveined
  • fresh dill sprigs for garnish (if desired)

Cook shrimp in boiling water until just pink - about 3-4 minutes. Drain and refrigerate until chilled.

In a small mixing bowl, combine cream cheese and cocktail sauce. Mix well.

Slice cucumbers on the diagonal, about 1/4 inch thick. Spread or pipe about 1 teaspoon of the cream cheese mixture onto each cucumber slice. Nestle the shrimp on top of the cream cheese mixture and top each appetizer with fresh dill.

Makes about 36 appetizers.
