Easy Pumpkin Waffle Recipe

Ingredients:

  • 1-1/2 cups all-purpose flour
  • 1-1/4 cups whole-wheat flour
  • 1/4 cup sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp allspice
  • 1/2 tsp ginger
  • 1 tsp vanilla extract
  • 1-1/2 cups buttermilk (lowfat)
  • 1 tsp orange peel zest
  • 1/2 cup fresh orange juice
  • 1 cup cooked pumpkin puree
  • 1/2 cup honey
  • 3 eggs, beaten
  • 1 Tbsp canola oil

Directions:

  1. Preheat oven to 250° F. In a large bowl whisk together the dried goods: flours, sugar, powder, soda, allspice and ginger.
  2. Combine buttermilk, orange peel, juice, pumpkin, eggs, honey, oil and vanilla together in a bowl.
  3. Add buttermilk mixture to the dry flour mixture; whisk until smooth. Let the waffle batter stand for a few minutes.
  4. Heat up waffle iron and then begin dropping mixture into it to cook. Store the cooked waffles in warm oven until ready to serve.

Make Easy Cranberry Syrup

Ingredients:

  • 1 pkg fresh or frozen cranberries, thawed
  • 1/3 cup water
  • 1 cup sugar
  • 3/4 cup corn syrup
  • 1/4 tsp almond extract

Directions:

  1. Combine cranberries and 1/3 cup water in saucepan. Bring to a boil over high heat. Boil for 10 mins or til cranberries pop, stirring frequently.
  2. Add sugar and corn syrup to pan. Bring to a boil over high heat. Boil 10 mins or until mixture thickens, stirring constantly. Remove saucepan from heat.
  3. Pour cranberry mixture into sieve, pressing berries to extract all juice. Cool completely.
  4. When syrup has cooled completely, strain once more in wire mesh sieve. Press cranberries with back of spoon to extract all of juice.
  5. Pour syrup into clean jar with lid and seal. Store in fridge for up to two months.
