Fondue is a staple at many parties. It's a fun food; one that guests can mingle over, interact with, and just plain enjoy. For the host, it's an easy dish that requires little preparation.
Cheese fondue usually consists of a gooey mixture of swiss or other melted cheese along with beer or other type of liquid base. This one is a little different, as the feature flavor is a hearty parmesan cheese. Cream cheese makes it thick and rich, and milk makes it even creamier.
Serve this fondue with cubes of hearty bread, bread sticks, vegetables, and even cubes of cooked meats for delicious dippers. Use fresh Parmesan, not the kind you buy in a shaker.
In a large pan, combine milk and cream cheese. Cook over low heat, stirring often, until cream cheese is melted and mixture is smooth. Add Parmesan cheese, garlic salt, and cayenne (if using), and continue stirring until well combined.
Transfer mixture to a fondue pot and keep warm. Serve with bread cubes, veggies, and other assorted food for dipping.
