Three Crockpot Recipes: an Appetizer, Entre and Dessert

Sweet & Sour Meatballs, Crock Pot Goulash or Cherry Cobbler are great ways to warm up a cold day. Serve a family dinner or a dessert with friends after work with ease.

These three slow cooked dishes guarantee a home cooked taste without the hours spent in the kitchen in preparation. While at work or on the run all day doing errands in between picking up and dropping off the kids, a slow cooked meal can rescue an otherwise time-pinched day with its delicious odor permeating the house upon entering, six to eight hours after setting the timer.

A quick slaw or salad, steamed beans or broccoli and a nice crusty bread can be made on the spot to go along with the goulash. A long day at the office can end with a hot meal ready and waiting. A long week at the office can end with a slow cooked meal to share with friends and family without any added stress.

Slow Cooker Sweet & Sour Meatballs

Ingredients:

  • 10-3/4 oz can of tomato soup
  • 16 oz can of whole cranberries
  • 1 Tblsp grape jelly
  • 1 tsp lemon juice
  • 1 lb frozen meatballs, cooked

Directions:

  1. Mix soup and cranberries in a sauce; bring to a boil.
  2. Add grape jelly and lemon juice. Remove from heat and pour over meatballs.
  3. Place all in a 6-qt slow cooker on low for minimum of 4 hours. Makes 20-30 meatballs.

Crock Pot Goulash

Ingredients:

  • 2 lb ground meat (beef, turkey, pork, all three or tofu)
  • 3 lb potatoes, cut in cubes
  • 1 lg onion, chopped
  • 1/2 lb fresh green beans, broken in half
  • 1 clove garlic, minced
  • 3 carrots, cut up in chunks
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp thyme, crushed
  • 1 tsp paprika
  • 1/2 cup beef broth
  • 1 Tblsp Worcestershire sauce
  • 1 bay leaf, crushed
  • 1 1-lb can tomatoes
  • 1 cup sour cream

Directions;

  1. Cut meat into 1-1/2 inch cubes and saute briefly till brown. Place meat in bottom of crock pot with onion and garlic.
  2. Season meat with mixture of salt, pepper, thyme, and paprika.
  3. Pour in 1/2 cup of beef broth. Add Worcestershire sauce, crushed bay leaf and the canned tomatoes. Add potatoes, green beans and carrots.
  4. Mix all ingredients together well in the crock pot so meat and veggies are evenly distributed.
  5. Cover crock pot and turn setting to Low and cook for 8-10 hours.
  6. One half hour prior to serving, add sour cream to mixture and stir well. Boil noodles, cook till al dente and serve them as the base for the Goulash.

Serves: 6

Crock Pot Cherry Cobbler

Ingredients:

  • 2 21-oz cans cherry pie filling
  • 18 -1/4 cup butter, softened
  • 1/2 cup chopped nuts
  • vanilla cake mix (or butterscotch)

Directions:

  1. Pour pie filling into a 5-qt slow cooker; spread evenly.
  2. In large bowl, combine dry cake mix with butter till mixture is crumbly; sprinkle over pie filling. Sprinkle with nuts.
  3. Turn slow cooker on low, cover and cook for minimum of three hours. Serve warm from the pot. Great with ice cream or whipped cream.

Serves: 6-8
