If you don't have time to whip up a batch of Dublin Coddle or Colcannon for your Saint Patrick's Day meal, jazz up your regular fare by adding a touch (or a healthy dose!) of green.
For parties, use green pepper chunks cut in the shape of shamrocks to garnish your serving plates, or to add to a salad. Use small cookie cutters to make this task a snap. Sprinkle whatever you can with fresh chopped parsley or green onions, or serve your appetizers on a bed of crisp green lettuce. Green salads make a perfect first course!
Need a few appetizer ideas? Try Mini Cheese Balls rolled in chopped green herbs and parsley, or a batch of fresh guacamole dip. Or try some creamy dips tinted green with food coloring. For a special dessert, you can adapt this simple cake recipe by adding green Jell-o powder instead of red.
Use a few drops of green food coloring to turn ordinary dishes "Irish." Soups can be transformed easily with food coloring, and kids get a real kick out of eating green chicken noodle soup! Milk, water, lemonade, and many other beverages are also great fun with a touch of green. Try making green-colored ice cubes too.
Baked goods like cupcakes, cookies, and Rice Krispies squares can be colored with food coloring, or simply frost these yummy desserts with green icing. Adding green candies or colored sugar will put them right over the top!
You can even turn your glass of Irish Cream green if you'd like to! Then raise your glass and give a traditional Irish toast.
